Details: French Tarragon is an herb with a delicate anise flavor. True French tarragon plants rarely flower and never produce seeds so new plants must be propagated from clippings off of other plants. With its subtle flavor it is used in cooking eggs, poultry, fish, and chicken and turkey dishes, flavoring salads , cheeses and butters, and makes excellent herb flavored oils and vinegars. Do not mistake French Tarragon with Russian or Mexican tarragon, both which have woody plant stems and no flavor to the leaves. Plant French tarragon 18-24 inches apart in full sun or partial shade. Grow tarragon in well-drained, sandy loam with organic matter. It will tolerate poor and nearly dry soil. It does not grow well in cold, wet, or compacted soil.
